LASAGNA W/BLEU DIAMOND DRESSING 

12 pieces lasagna noodles, uncooked
1 lb ground sausage
1 jar (26 oz.) spaghetti sauce
1 jar (16 oz.) Bleu Diamond Dressing
3 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 cup diced onion
2 tsp oregano
2 tsp chopped basil
1 tsp of each of the following: salt, pepper, sugar and cinnamon

  • In large skillet, brown meat and onion, drain.
  • Stir in spaghetti sauce.
  • Add all spices, simmer 10 minutes
  • Heat oven to 350ºto 375º
  • In a baking dish repeat layers (3 times each) always beginning and ending with noodles: 3 uncooked lasagna noodles, Meat sauce, Bleu Diamond Dressing, Parmesan cheese, Mozzarella cheese.
  • Cover with foil and cook for 45 minutes.
  • Uncovered cook another 15 minutes or until golden brown.

 

SWEET POTATOES WITH BLEU DIAMOND DRESSING AND BACON

3-5  large Sweet Potatoes, clean and cut into 1/4 inch rounds, leave skin on
Season with Garlic Salt, cracked Black Pepper, Smoked Paprika & dried Thyme
Olive Oil, to lightly coat Sweet Potatoes
5 slices of crispy crumbled bacon
8 ounces Bleu Diamond Dressing
Chives, snipped for garnish.

  • Heat oven to 425º 
  • Prepare baking sheet with parchment  paper. 
  • Toss sweet potatoes with olive oil and seasonings. 
  • Arrange in a single layer on baking sheet. 
  • Bake for about 25-30 minutes or until sweet potatoes are golden brown & softened. 
  • Take potatoes out of oven, put rack in lower 1/2 of the oven and set temperature to low broil.
  • Top each sweet potato round with a teaspoon bleu diamond dressing and bacon crumbles. 
  • Broil until the cheese is bubbling and melted. 
  • Let cool in baking sheets on racks and top with snipped chives.


GREEN BEAN AND WHOLE GRAIN PENNA PASTA SALAD

1 1/2 pounds green beans, stems trimmed and cut into 1 1/2-in. lengths
16 ounces whole-grain penne pasta
1 cup Bleu Diamond Dressing
2 tablespoons red wine vinegar
3 tablespoons each finely chopped flat-leaf parsley and finely chopped chives
5 crisply cooked slices bacon, crumbled 

  • Bring 2 large pots of salted water to a boil. 
  • Prepare a large bowl of ice and cold water. 
  • In one pot, boil green beans 3 minutes; drain and plunge in ice water to stop cooking. In the other, cook pasta until tender (9-10 minutes. 
  • Drain/rinse thoroughly under cold water.
  • In a large bowl, toss together pasta, green beans, Bleu Diamond dressing, parsley, chives, and bacon, until pasta is well coated.
  • Season with salt to taste.

HOT ARTICHOKE & BLEU DIAMOND CHEESE DIP

 1 16 oz. jar Bleu Diamond Dressing 
1 8 oz. jar artichoke hearts, chopped
1 8 oz. package cream cheese
3/4 cup parmesan cheese, grated

  • Combine all ingredients in a large bowl.
  • Then place in two 16 oz. ramekins
  • Bake at 375º for 25-30 minutes or until brown and bubbly
  • Serve w/your favorite chips or vegetables

 

CHICKEN BACON BLEU DIAMOND WRAPS 

2 cups of chopped grilled chicken
3/4 cup shredded mozzarella cheese
9 slices of bacon, cooked well to crumble
1 cup Bleu Diamond Dressing
6 8 inch flour or wheat tortillas
3 cups of shredded romaine lettuce 

  • In a large bowl combine all ingredients (except the lettuce and tortillas).
  • In microwave warm tortillas to make them roll easier.
  • Spread mixture on tortilla and top w/lettuce.
  • Roll and serve.

 

 MACARONI AND BLEU DIAMOND

1 package macaroni noodles
1 lb shredded cheddar cheese
1/2 cup milk
2 tsp butter
1 tsp flour
1 cup Bleu Diamond Dressing

  • Heat oven to 350º
  • Boil noodles until soft, drain and pour in glass pan.
  • In skillet melt butter and add flour, stir and add milk. Slowly add in grated cheese until melted completely.
  • Pour over cooked noodles and mix.
  • Then stir in Bleu Diamond Dressing.
  • Bake in oven until golden and bubbly.

STUFFED MUSHROOMS WITH BLEU DIAMOND DRESSING

8 Large mushrooms
1/2 jar Bleu Diamond Dressing
4 crisps pieces of bacon, crumbled
1/8 cup parmesan
1/4 cup butter melted

  • Heat oven to 350º 
  • Cut stems off of mushrooms, clean with dry towel.
  • Brush butter on the inside and out of mushroom.
  • Fill with Bleu Diamond Dressing.
  • Sprinkle with parmesan.
  • Sprinkle with bacon.
  • Spray cooking sheet w/oil spray
  • Cook at in oven for about 20 minutes or until bubbly ….YUM!
